Granite remnant 3 cm

We got a good offer from a reputable fabricator for 3cm Brazil brown Granite (http://tanbrown.org) but I am a bit worried because I heard that using remnants could have problems down the road with chipping or cracking. Is this true?

Another question I have on a 3cm Granite (http://tanbrown.org) /remnant is whether three corbels are enough support on a 60" x 38" island (http://maplered.com) ?
